Pumpkin Spice Individual Baked Oatmeal

Makes about 12

1 organic egg
1 tsp vanilla extract
1 cup pumpkin puree
1 ripe banana, mashed
1/4 cup raw local honey
2 1/2 cups rolled oats
2 tsp pumpkin pie spice
1 tsp cinnamon
1 1/2 tsp baking powder
1 cup unsweetened almond milk

These are a one bowl wonder. Quick to make and a super easy breakfast. They can be eaten like muffins cold or warm or you can heat them in milk and break apart like a bowl of oatmeal. They can also be frozen so I usually make a bunch to keep on hand.

Step 1:

Preheat oven to 350 degrees
Step 2:

Mix all of your wet ingredients (except the milk) in a bowl

Add in the dry ingredients

Mix in the milk
Step 5:

Line a muffin tin with cupcake liners. Use an ice cream scoop to portion out your baked oatmeals.

Bake for about 30 minutes or until inserting a toothpick in the center comes out clean.
Step 7:

Enjoy! They are really yummy warm!.

Pumpkin Spice Latte

Makes equivalent of a Grande

6 oz strong coffee
3/4 cup unsweetened almond milk
1 tsp vanilla extract
4 TBSP organic pumpkin puree
1 tsp pumpkin pie spice
2 TBSP maple syrup

I love pumpkin spice lattes! I HATE drinking a huge part of my daily calories. That doesn't mean I still don't treat myself to Starbucks once in awhile. This is my take on my Starbucks favorite. I know a traditional latte is with espresso but this is an easy version to make at home with your Shakeology Shaker! This is half the calories and sugar of the regular version even if you get it with low-fat milk and no whip!

Step 1:

Put all the ingredients in your shaker and shake it up!

That's it it's that easy! You can even drink it right out of your shaker and save on dishes. I still like a nice fancy mug or travel one if I am on the go though. **A NOTE: If your coffee isn't really hot or your other ingredients are really cold you may have to pop it in the microwave or you can heat your milk first too.**
